Arrival
Chef Paco arrives 45–60 minutes before service time. He brings everything: paella pan or brasero grill, cooking equipment, ingredients, serving dishes, and condiments. He sets up quietly in the designated outdoor area without interrupting the party.
Cooking
The cooking is part of the experience. The paella starts to colour and smell extraordinary about 45 minutes before service. The brasero grill draws the group in naturally. Nobody has to announce anything — the food announces itself.
Service
We serve when the food is ready. For larger groups, we serve in rounds or as a buffet depending on the layout. Every guest eats properly; nobody gets a smaller portion because they were last in the queue.
Cleanup
Paco and his team clear everything within 30 minutes of service ending. They leave the pool terrace exactly as they found it. The host doesn't pick up a pan, scrub a surface, or deal with a single piece of equipment.
